Sometimes life gets busy…

I know I have been really bad at posting the blog updates lately.

I’ve been so busy at work, and busy at home.

It’s only 2 more sleeps until N gets home, and even though 3 weeks away isn’t a long time, for some reason it feels like an eternity this time.

I’ve spent the last couple evenings cleaning up the house and doing laundry. Mostly doing laundry.  Between changing the sheets on the bed in the master bedroom and washing all the sheets from the multiple guests I’ve had at the house, I swear, it feels like I’ve been doing laundry non-stop since Saturday.  And the best part is, there are still at least 2 more loads of laundry that need to be done!  Ugh! Laundry never ends!

Anyway, let’s rewind to the beginning of the week and cover the first two days of food, Okay?

Monday!

As usual, Monday started off with tea, oat meal and my home made mocha.  That takes up 11pts+ before 9am! There was also a banana o’clock that I forgot to take a picture of, but hey, you guys know what a banana looks like, right?

Lunch on Monday was a a trip to my favourite sandwich shop for a lunch date with a friend.  This baby is loaded with veggies & a single, thin, slice of cheese.  I calculated the points for this guy way back when PointsPlus was first launched & track it at 10pts+.

I’ve been going to this sandwich shop an average of at least once a week for longer than the current owners have owned it.  On Monday I got the smart idea to ask how long it has been since they took over.  The answer: 3 1/2 years.  Yup, I have been taking the same sandwich to my WeightWatchesr meeting with me every week for over 3 1/2 years.  I told you I love routine and I’m a creature of habit!

Monday’s afternoon snack was mandarin orange segments for 0pts+.

For some reason, even though it’s only a 3 week trip for N, I’ve been having a rough time of it the last couple days.  It’s probably because I had mentally prepared myself for a 2 week trip, and then it got extended, so he’s supposed to be home right now, but he’s not.  Oh well, he’s home in 2 more sleeps, and the change of plans makes it possible for him to be home for my Birthday.

When I got home from work on Monday, I was feeling kind of blue, and I wanted some ‘comfort food’. For me, that is tomato soup!  I lightened it up a little by using half a can of water & half a can of skim milk, making my bowl worth 2pts+. 2 slices of whole wheat toast cost me 3pts+, and I made some ‘garlic butter’ to spread on the toast, it cost me 2pts+.   To add some depth to my soup I often add some parsley flakes and a little garlic powder. This time I also added a tiny sprinkle of my 3 cheese Italian cheese blend, but it was so little, it didn’t even equal 1pt.

 

Tuesday!

As you can probably guess, Tuesday started out the same as always with my 11pts+ spent before 9am on oatmeal, tea & coffee.  I forgot to pick up bananas, so my mid morning snack was my go-to banana alternative of late: mandarin orange segments.

Lunch on Tuesday was the last of the left over spaghetti w/ dice onions & tomatoes from about a week ago.  Don’t worry, it’s been in the freezer, not the fridge. This time though, I chose to add a small amount of left over chicken(about 1pts+) from my Saturday Night Extravaganza, instead of cheese.   All in all, a delicious meal! I need to make more of this. It’s something I love having in the freezer ready to go!

Now, since I was feeling a little blue, I invited my friend Jenny up to the lake for the evening last night.  I asked her if she was going to eat supper before she came, or if she wanted me to make her a WeightWatchers friendly meal.  She opted for the meal. I guess some people just love having their Weight Watchers leader cook them dinner! 😉  Now, I suggested to her that I make spaghetti & tomato sauce, and she liked that idea, but then I opened the freezer meal I had brought for lunch, and what did I find?

So, that got me to thinking.

I am really trying hard to make do with the food we have in the house. We have a LOT of food there, so there is no need to be going to the grocery store a couple times a week, other than for fresh fruits & veggies.

It was quite the challenge to come up with something that used mostly things that were already in the house, but I think I did pretty well.

This baby cost us each around 12pts+, but man was it delicious. I was actually pretty impressed with myself.

Ingredients:

1 cup Kraft Light Mozza/Cheddar

1tsp light herd & garlic crumbled feta

chopped spinach

canned diced tomatoes

whole wheat tortillas.

You can used as much spinach & tomatoes as you like, but here’s how it goes together.

First, you lay down one tortilla and cover it with about 1/3 of your chopped spinach, then sprinkle over half of your cheese.  Then cover it with a second tortilla. Spread the rest of your spinach over top, add tomatoes, sprinkle the last of your cheese over top, including the feta. Bake at 350 for 8-10 minutes.

You hardly notice the spinach between the tortillas, and I use this ‘trick’ to get some nutrition in to pizza night when we have N’s son for the weekend.  Once the cheese melts between the 2 tortillas, there is no way to tell there is spinach in there!  It’s the perfect way to get veggies on to a pizza without anyone knowing!

 

Right now, I am noticing that updating the blog every 2 days seems to be working best for me.  I do have a very packed schedule for the next 10 days, with a lot of challenging eating situations.  First, I have dinner with N’s family on Friday, then my family birthday dinner on Saturday. Then on Tuesday it’s the dinner out with friends for my Birthday, then on Thursday it’s my actual birthday, and on Friday I hope to have a sleep in and breakfast in bed with my man.

I plan to do my best to keep on photographing my food and tracking the points, so please, feel free to give me a nudge if you haven’t seen a blog for a couple days!

    The pizza looks delish! I would really like to try it.

    How much do you count the spaghetti as? I love pasta and have a hard time counting the points properly.

      I actually weighed the spaghetti per the package instruction. It came out to 8pts+ per 85g serving, but I only have half that much in any meal, so I have 4pts+ per meal.

        Hi I am making my rounds in the weight watcher internet world today. Trying to figure out this new program. It sounds amazing, honestly. I am considering signing up even if it is just for a short time to figure out the new program and get the new kit. OR I might get my mom to pick up the kit for me at her next meeting, and then do it myself. I am thinking it would be a great time to start since I am basically a brand new weight-watcher at this point. I think it would really motivate me to have a brand new program that I have to really pay attention to and learn. Your food for the day looks great! Even witht he repeat dinner
